In cities with a Chinatown, weekend mornings bring dim sum carts or order sheets, and lines form early at the most popular spots in Yonkers; walk-ins are standard and reservations are uncommon outside large banquet restaurants. Regional labels matter: Cantonese, Sichuan, Hunan, Shanghainese and Taiwanese kitchens cook very differently, so a restaurant's stated region is a better guide to the food than the word "Chinese" alone. Some smaller restaurants in New York are BYOB with no corkage fee; call ahead to confirm. A tip of 15-20% is customary for table service but not expected at counter-order takeout.
